This is one of those creamy Dorito chicken casseroles that shows up at family dinners and disappears fast. Crushed Nacho Cheese Doritos, shredded chicken, creamy sauce, and a thick layer of melted cheese. It’s crunchy on top, soft underneath, and very filling. - 4 cups crushed Nacho Cheese Doritos (plus extra for topping)
- 3 cups cooked chicken, shredded or chopped
- 1 can cream of chicken soup (10.5 oz)
- 1 cup sour cream
- 1 to 1 1/2 cups shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced onion (optional)
- Salt and black pepper
- Chopped parsley or cilantro for the top
Preparation / How to Make It
I started by crushing the Doritos. Not into dust. Just broken up enough to layer.
In a bowl, I mixed the cream of chicken soup and sour cream. Added a pinch of salt and pepper. Stirred until smooth.
Added the chicken, diced tomatoes, and onion to the sauce. Mixed everything together. It should look thick and creamy.
In a greased baking dish, I spread a layer of crushed Doritos. Then spooned over some of the chicken mixture. Sprinkled cheese on top. Repeated the layers. Finished with cheese and a handful of extra Doritos.
Baked until hot and bubbly and the cheese was fully melted. The edges browned a little. That’s the good part.
Let it rest for a few minutes. Scoop it out and top with a little parsley. Creamy, crunchy, and very comforting.
