This is the quick no yeast bread I make when I realize we’re out of bread and I don’t feel like waiting on dough to rise. It’s a simple baking powder bread. No yeast, no proofing, no long kneading. If you’re searching for 20 minute bread recipe or quick homemade bread without yeast, this is exactly that. It bakes up with a golden crust and a soft, slightly dense center.
It’s not artisan bread. It’s practical bread. Good for slicing, toasting, or tearing apart while still warm. I usually mix it in one bowl and shape it right on the pan.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar (optional)
- 3/4 to 1 cup milk
- 2 tablespoons olive oil or melted butter
Preparation / How to Make It
I preheated the oven first. Hot oven matters here.
In a bowl, I mixed the flour, baking powder, salt, and sugar. Gave it a quick stir so everything was evenly combined.
Added the milk and oil. Started with less milk and added more until it came together. It should be soft but not sticky.
Turned it out onto a lightly floured surface. Kneaded it just a few times. Not much. Just enough to shape it into a round.
Placed it on a lined baking sheet. Cut a shallow X on top so it bakes evenly.
Baked until golden brown and firm on top. It sounds slightly hollow when tapped.
Let it cool a little before slicing. Soft inside, crisp outside, and done in about 20 minutes.
