This rich and comforting baked chicken dish features tender chicken smothered in a creamy mushroom sauce. Perfect for an easy dinner with rice, pasta, or mashed potatoes.
Ingredients
- 4 chicken thighs or breasts
- 2 cups mushrooms (sliced)
- 1 cup heavy cream (or half-and-half)
- 1/2 cup chicken broth
- 3 cloves garlic (minced)
- 1/2 cup grated parmesan cheese
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
Preheat oven to 375°F (190°C).
Season chicken with salt and pepper. In a skillet, heat olive oil and butter, then sear chicken on both sides until golden (about 3–4 minutes per side).
Remove chicken and set aside. In the same pan, sauté mushrooms until soft, then add garlic and cook for 1 minute.
Pour in chicken broth and cream, stir in parmesan cheese and seasoning. Let the sauce simmer for a few minutes until slightly thickened.
Place chicken in a baking dish and pour the mushroom sauce over it.
Bake for 25–30 minutes until chicken is fully cooked and sauce is bubbly.
