Crabs that are marinated in soy sauce are called too ganjang gejang.
This recipe is one of the most delicious food you could taste, when the crab meat stays inside the sauce,it becomes really tender and full of flavor.
If you prepare this meal for the first time you and your family will be in love with it.
Ingredients list:
- Six or seven blue crabs, about 2 pounds.
- One sliced thinly apple.
- One medium sliced onion.
- Six garlic gloves.
- One tablespoon of chopped ginger.
- Two chopped green chili peppers.
- Three small red chili peppers that are dried.
- 8×5 inches dried kelp.
- Two and half cups of soy sauce.
- Quart cup of rice syrup.
- Six cups of water.
For garnish:
- Green onions chopped.
- Chili flakes or red chili pepper.
- Sesame seeds toasted.
Serve this meal with rice.
Steps and methods:
- Put your crabs in the fridge for 2 hours to let them sleep.
- Prepare the marinade in a heavy pot by combining rice syrup, garlic and onion, Apple, dried chili peppers, Ginger, dried kelp, water and soy sauce. And mix everything then bring it to a boil for 20 minutes on medium to high heat.
- Reduce the heat and let the boil to continue boiling for one more hour.
- Cool down the marinade then strain it and set it aside.
- remove the crabs from the freezer. bring one of them and start cleaning by removing the apron, it is very easy just you need to lift the apron and twist it off and turning it over then remove the shell, finally remove any unwanted parts as eyes and antennae, and repeat the same process on all the crabs you have.
- the crabs need to be brushed under cold running water to get cleaned crabs but make sure to don't wash the tomalley away. Then drain them and put back the shell on each crab to give it the whole look.
- put the crabs in a container with belly up and add the marinade into the container, and press your crab down using something heavy, as a rock, so this is how the crabs will absorb the marinade then refrigerate it for 24 hours.
- Serve this recipe with rice and to eat it easily, Use a scissors or a knife to get bite size pieces of crab meat and to take out the crab meat that it is inside the claw, try to break it with the back of the knife. Make sure to follow all this tips to avoid damaging your teeth, there are many stories about Korean people that breaks their teeth while eating ganjang gejang.
- To garnish your dish use chopped red chili peppers and green onions with toasted sesame seeds.
- Suck all the meat of the crabs from the claws body and legs.
- Try to mix rice with the crab meat and the marinade and eat it with a spoon.
- You could also have it as a sushi bites by adding rice and crabs meat and the sauce of the marinade with sliced cucumber inside dried kelp and enjoy.
Best advices for this recipe:
- It is better to buy female crabs.
- If you don't have enough time to clean the crabs, the fishmonger will do it for you, so you should not freeze them then.
- Make sure to remove the gills because they contain worms.
- One of the famous names of this recipe is rice thief, because during eating the meal you will finish all the prepared rice, it is perfect with this kind of dishes.
- If you had any leftovers of marinade, boil it again and cool it down and keep it in the fridge to use it later in vegetables frying or with rice again.
- For storage the ganjang gejang for one week, separate crabs from the marinade and cover it with plastic wrap then freeze it. But for the sauce, boil it again and cool it down then freeze it too. Next time you want to have this meal, take it out of the fridge and thaw it then reheat it and serve it easily with the marinade.
