Pecan Thumbprint Cookies

These Pecan Thumbprint Cookies are buttery, tender, and filled with a rich, gooey pecan caramel topping. Each cookie has a soft, golden base with a sweet, nutty center that makes every bite irresistible. They are perfect for holiday baking, cookie trays, family gatherings, or an everyday homemade treat.

Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the Pecan Filling

  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter
  • 2 tablespoons heavy cream
  • 1 tablespoon light corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup pecan halves or chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar until light and creamy.
  3. Add the egg yolk and vanilla extract. Mix until well combined.
  4. Gradually add the flour and salt, mixing just until a soft dough forms.
  5. Roll the dough into approximately 1-inch balls and place them about 2 inches apart on the prepared baking sheet.
  6. Use your thumb or the back of a small measuring spoon to press a deep indentation into the center of each cookie.
  7. Bake for 10–12 minutes, until the edges are lightly golden. If the indentations puff up, gently press them down again while the cookies are still warm.
  8. Allow the cookies to cool slightly on the baking sheet while preparing the filling.

Prepare the Pecan Filling

  1. In a small saucepan, combine the brown sugar, butter, heavy cream, and corn syrup.
  2. Heat over medium-low heat, stirring continuously until the butter melts and the sugar dissolves.
  3. Bring the mixture to a gentle simmer and cook for 1–2 minutes until slightly thickened.
  4. Remove from the heat and stir in the vanilla extract and pecans.
  5. Spoon a small amount of the warm pecan mixture into the center of each cookie.
  6. Allow the cookies to cool completely so the filling can set before serving.

Tips for the Best Pecan Thumbprint Cookies

  • Use softened butter rather than melted butter to achieve a tender cookie texture.
  • Chill the dough for 20–30 minutes if it feels too soft to roll.
  • Make the indentations deep enough to hold the filling without breaking through the bottom.
  • Avoid overbaking to keep the cookies tender rather than dry.
  • For an attractive finish, place one pecan half on top of each cookie before the filling sets.

Storage

Store the cooled cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. Place parchment paper between layers to prevent sticking. Allow refrigerated cookies to come to room temperature before serving.
