Bangers and Mash Recipe

Ingredients for Bangers and Mash

  • 8 high-quality pork sausages (or chicken sausages as a pork alternative)
  • 2 pounds Yukon Gold or other medium-starch potatoes, peeled and cut into large chunks (or boiled whole and peeled while hot)
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter
  • 3/4 to 1 cup hot milk (whole milk recommended, but 2% can be used)
  • 1 batch of homemade onion gravy (see our recipe for the best onion gravy)

How to Prepare Bangers and Mash

  1. Preheat the Oven: Preheat your oven by setting it to 400°F (200°C).
  2. Make the Onion Gravy: Prepare the onion gravy in advance. Follow our recipe for the best homemade onion gravy.
  3. Cook the Potatoes: Place the potatoes in a pot, cover with water, and add salt. Bring to a boil, then lower the heat and simmer for 15-20 minutes until tender. Drain the potatoes thoroughly and return them to the pot over low heat to keep warm. For the best texture, use a ricer or food mill to mash the potatoes while they are hot. If using a hand masher, mash the potatoes until fluffy. To prevent a gluey texture, avoid over-mashing the potatoes.
  4. Prepare the Mashed Potatoes: Stir in the butter until melted, then gradually add hot milk, allowing the potatoes to absorb the liquid. Add additional milk as necessary to achieve your desired consistency. Season with salt and pepper to taste.
  5. Cook the Sausages: While the potatoes cook, place the sausages in a baking dish with a little oil. Roast in the oven for about 10 minutes on each side, or until browned and crispy. Alternatively, you can fry the sausages, but baking them gives a crispy exterior and juicy interior.
  6. Assemble and Serve: On each plate, create a mound of mashed potatoes. Lay the sausages on top and generously pour onion gravy over them. Traditionally, peas are served as a side dish.
