Ingredients
- 2 lbs Yukon Gold potatoes, washed and cut into 2-inch chunks
- 8 tablespoons butter, divided
- 3/4 cup whole milk or heavy cream
- 1 onion, diced
- 1.5-2 lbs lean ground beef or turkey
- 3 cups of mixed frozen vegetables, including peas, carrots, corn, and/or green beans
- Kosher salt and black pepper, to taste
Instructions
- Cook the Potatoes: Place the potatoes in a large pot, cover with cold water, and add 1 tablespoon of kosher salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Prepare the Meat Mixture: While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Sauté the diced onion until softened, about 2 minutes. Add the ground beef or turkey and cook until fully browned, breaking it into small pieces. Season with salt and pepper. Avoid overcooking to keep the meat moist.
- Make the Mashed Potatoes: Once the potatoes are tender, drain and return them to the pot. Mash with 4 tablespoons of butter and the milk. Season with salt and pepper to taste.
- Assemble the Pie: In a 9x13 baking dish, layer the cooked ground meat mixture, frozen vegetables, and mashed potatoes. You can also use two smaller baking dishes to freeze one for later.
- Finish and Bake: Smooth the mashed potatoes with the back of a spoon, creating some ridges or a fork pattern for texture. Drizzle the top with the remaining tablespoon of melted butter. Bake at 425°F (220°C) for about 30 minutes, or until the potatoes start to brown. To achieve extra crispiness, broil for the final 5 minutes.
