Classic Shepherd's Pie Recipe
This easy Shepherd's Pie features tender Yukon Gold potatoes, savory ground beef or turkey, and a mix of vegetables, all baked to perfection. A hearty and comforting meal suitable for any occasion!

Ingredients

  • 2 lbs Yukon Gold potatoes, washed and cut into 2-inch chunks
  • 8 tablespoons butter, divided
  • 3/4 cup whole milk or heavy cream
  • 1 onion, diced
  • 1.5-2 lbs lean ground beef or turkey
  • 3 cups of mixed frozen vegetables, including peas, carrots, corn, and/or green beans
  • Kosher salt and black pepper, to taste

Instructions

  1. Cook the Potatoes: Place the potatoes in a large pot, cover with cold water, and add 1 tablespoon of kosher salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  2. Prepare the Meat Mixture: While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Sauté the diced onion until softened, about 2 minutes. Add the ground beef or turkey and cook until fully browned, breaking it into small pieces. Season with salt and pepper. Avoid overcooking to keep the meat moist.
  3. Make the Mashed Potatoes: Once the potatoes are tender, drain and return them to the pot. Mash with 4 tablespoons of butter and the milk. Season with salt and pepper to taste.
  4. Assemble the Pie: In a 9x13 baking dish, layer the cooked ground meat mixture, frozen vegetables, and mashed potatoes. You can also use two smaller baking dishes to freeze one for later.
  5. Finish and Bake: Smooth the mashed potatoes with the back of a spoon, creating some ridges or a fork pattern for texture. Drizzle the top with the remaining tablespoon of melted butter. Bake at 425°F (220°C) for about 30 minutes, or until the potatoes start to brown. To achieve extra crispiness, broil for the final 5 minutes.

Additional Tips

For a richer flavor, use heavy cream in the mashed potatoes. If you prefer a vegetarian option, substitute the meat with lentils or your favorite plant-based protein. This dish freezes beautifully, making it an excellent choice for meal prep.
