Tender, flavorful potato wedges cooked slowly with garlic, herbs, and butter. An easy and delicious side dish!
Ingredients
- 4–5 medium potatoes (cut into wedges)
- 3 tbsp olive oil or melted butter
- 4 cloves garlic (minced)
- 1 small onion (finely chopped)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt & pepper to taste
- 2 tbsp chopped parsley (optional)
Instructions
Line your slow cooker with foil (optional for easy cleanup).
In a large bowl, mix potatoes with olive oil (or butter), garlic, onion, and all the spices.
Transfer everything into the slow cooker.
Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the potatoes are tender.
For crispy edges, you can finish them in the oven at 220°C (425°F) for 10 minutes.
Garnish with fresh parsley and serve hot.
