A moist, rich, and flavorful cake made with sweet potatoes and warm spices, topped with a smooth, creamy glaze.
Ingredients
- 2 cups mashed sweet potatoes (cooked & cooled)
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil or melted butter
- 4 large eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger (optional)
- 1 tsp baking soda
- 1/2 tsp salt
Glaze
- 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
Preheat oven to 180°C (350°F) and grease a baking pan.
In a large bowl, mix mashed sweet potatoes, eggs, oil (or butter), sugars, and vanilla.
In another bowl, combine flour, baking soda, salt, and spices.
Gradually add dry ingredients to the wet mixture and mix until smooth.
Pour batter into the prepared pan and bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely.
Mix glaze ingredients and drizzle over the cake before serving.
