Ingredients
- 1 box (15.25 oz) yellow cake mix
- 1 box (3.4 oz) instant vanilla pudding mix
- 3/4 cup pineapple juice
- 4 large eggs
- 1/2 cup vegetable oil
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
For the Pineapple Glaze
- 1 cup powdered sugar
- 2–3 tablespoons pineapple juice
- 1 tablespoon melted butter, optional
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a Bundt pan, making sure to coat the center tube and all the grooves.
- In a large bowl, combine the yellow cake mix and instant vanilla pudding mix.
- Add the pineapple juice, eggs, vegetable oil, sour cream, and vanilla extract. Beat with an electric mixer on medium speed for about 2 minutes, until the batter is smooth.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 15 minutes, then carefully invert it onto a wire rack. Allow it to cool completely before adding the glaze.
How to Make the Pineapple Glaze
- Add the powdered sugar to a small bowl.
- Gradually whisk in the pineapple juice, one tablespoon at a time, until the glaze is smooth and thick but easy to pour.
- Stir in the melted butter if desired.
- Drizzle the glaze over the cooled cake, allowing it to run naturally down the sides.
- Let the glaze set for about 10–15 minutes before slicing.
Tips for the Best Results
- Use room-temperature eggs and sour cream for a smoother batter.
- Grease the Bundt pan thoroughly to help the cake release easily.
- Avoid opening the oven during the first 35 minutes of baking.
- For a stronger pineapple flavor, use pineapple juice in the glaze and garnish with small pineapple pieces if desired.
Storage
Store the cake in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days. If refrigerated, let each slice sit at room temperature for a few minutes before serving.
